Thai cooking

Day six of our Asia trip was the only one not scheduled in advance. On a recommendation from a friend, we signed up for a half day cooking class at Chiang Mai Thai Cookery School which was one of the highlights of the whole trip.

After taking us to the local market to learn about Thai vegetables and herbs, we made coconut soup, fish cakes, green curry, and finally pad thai. The other people in the class were very interesting as well: almost all were young and in the middle of long (three, six, even nine month trips) around the world, hailing from Ireland, England, Italy, Canada, and Israel, along with one older couple from Singapore. Unlike most Americans, who often travel some in college or during summers but generally start working quickly after finishing school, many Europeans backpack around the world, and Chiang Mai is a popular destination with its beautiful natural surroundings and many available hiking excursions.
